Ingredients
  

For the Tart Base
  • 2 cups granola Choose your favorite granola for added flavor.
  • 1/2 cup honey or maple syrup Either can be used for sweetness.
  • 1/4 cup melted coconut oil Coconut oil adds a slight coconut flavor.
  • 1/2 teaspoon vanilla extract Enhances the flavor of the tart base.
For the Filling
  • 1 cup yogurt (plain or flavored) Choose your preferred yogurt flavor.
  • 1 cup mixed berries (strawberries, blueberries, raspberries) Fresh or frozen can be used.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the granola, honey or maple syrup, melted coconut oil, and vanilla extract. Mix until the granola is evenly coated.
  3. Grease a muffin tin with a little coconut oil. Press the granola mixture into each muffin cup, forming a shell. Ensure the edges are thick enough to hold the filling later.
Baking
  1. Place the muffin tin in the oven and bake for 10-12 minutes, or until the granola is golden and crisp.
  2. Once baked, allow the tarts to cool for about 10 minutes. They will firm up as they cool.
Filling and Serving
  1. Carefully remove the granola cups from the muffin tin. Spoon in your yogurt of choice into each tart shell.
  2. Fill each tart with your mixed berries.
  3. Drizzle with a little extra honey or maple syrup if desired, and enjoy immediately or store in the refrigerator for later!

Notes

Store in an airtight container in the refrigerator for up to three days. For best texture, fill the tarts just before serving. Avoid microwaving to maintain crunch; reheat in a warm oven instead.
