  • 2 cups fresh blueberries

  • 1 tablespoon lemon juice Fresh lemon juice is recommended.
  • 1 teaspoon vanilla extract Adds flavor depth.
Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter, melted Browned butter can enhance flavor.
  • 0.5 cup brown sugar Gives a nice caramel flavor.
  • 0.25 teaspoon salt
  • 0.5 teaspoon baking powder
  • 1 large egg Room temperature for best mixing.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir gently and set aside.
  3. In another bowl, whisk together the melted butter, brown sugar, and egg until well combined.
  4. Add the all-purpose flour, salt, and baking powder, stirring until a soft dough forms.
Assembly
  1. In a greased 9×9-inch baking dish, press about two-thirds of the dough into the bottom.
  2. Pour the blueberry filling on top and crumble the remaining dough over the blueberries.
Baking
  1. Bake for 30-35 minutes or until the top is lightly golden and the filling is bubbling.
  2. Allow the bars to cool completely, then slice into squares and serve warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 5 days. These bars freeze well for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at 350°F (175°C) for about 10 minutes.
