Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir gently and set aside.
- In another bowl, whisk together the melted butter, brown sugar, and egg until well combined.
- Add the all-purpose flour, salt, and baking powder, stirring until a soft dough forms.
Assembly
- In a greased 9×9-inch baking dish, press about two-thirds of the dough into the bottom.
- Pour the blueberry filling on top and crumble the remaining dough over the blueberries.
Baking
- Bake for 30-35 minutes or until the top is lightly golden and the filling is bubbling.
- Allow the bars to cool completely, then slice into squares and serve warm or at room temperature.
Notes
Store in an airtight container in the refrigerator for up to 5 days. These bars freeze well for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at 350°F (175°C) for about 10 minutes.
