Preparation
- Prepare your workspace by laying down parchment paper on a baking sheet.
- Using an ice cream scoop, take a generous scoop of ice cream and place it on the bottom side of one Biscoff cookie.
- Take another Biscoff cookie and gently press it onto the ice cream to form a sandwich.
- Repeat the process until you’ve used up all your cookies and ice cream.
- Place your finished ice cream sandwiches in the freezer for at least 1 hour.
Serving
- Drizzle chocolate sauce over the top of each sandwich if desired.
- Take them out of the freezer, cut them into halves if desired, and enjoy!
Notes
To keep the sandwiches fresh, store them in an airtight container in the freezer for up to two weeks. Reheat in the microwave for 10-15 seconds if you prefer a warm dessert.
