- Start by carefully cutting your watermelon into thick slices. Use a sharp knife to remove the rind, then dice the juicy flesh into small cubes.
- Dice your red onion finely; this will add a lovely crunch and sharp flavor to the salsa. Mince the jalapeño, removing seeds to control heat levels or leaving them in for an extra kick!
- In a large mixing bowl, combine the diced watermelon, red onion, minced jalapeño, and freshly chopped cilantro.
- Squeeze the juice of two limes over the mixture. The acidity from the lime will enhance the flavors and help preserve the freshness.
- Sprinkle in some salt to taste. Gently mix everything until well combined, being careful not to mush the watermelon too much.
- For best results, allow the salsa to chill in the refrigerator for about 30 minutes. This gives the flavors time to meld beautifully together.
Notes
Substitutions: If you don’t have jalapeños, try diced bell peppers for a milder flavor. Alternatively, some diced mango can provide a unique twist! Avoid overmixing to maintain texture. Store in an airtight container in the refrigerator for up to 3-4 days.
