  • 4 cups diced watermelon Make sure it's ripe for maximum sweetness.
  • 1/2 cup diced red onion Finely diced for texture.
  • 1/4 cup chopped fresh cilantro Fresh cilantro adds a bright flavor.
  • 1 unit jalapeño, seeded and minced Adjust amount for desired spice level.
  • Juice of 2 limes limes Fresh lime juice enhances flavors.
  • to taste unit salt Add salt to taste for seasoning.

  1. Start by carefully cutting your watermelon into thick slices. Use a sharp knife to remove the rind, then dice the juicy flesh into small cubes.
  2. Dice your red onion finely; this will add a lovely crunch and sharp flavor to the salsa. Mince the jalapeño, removing seeds to control heat levels or leaving them in for an extra kick!
  3. In a large mixing bowl, combine the diced watermelon, red onion, minced jalapeño, and freshly chopped cilantro.
  4. Squeeze the juice of two limes over the mixture. The acidity from the lime will enhance the flavors and help preserve the freshness.
  5. Sprinkle in some salt to taste. Gently mix everything until well combined, being careful not to mush the watermelon too much.
  6. For best results, allow the salsa to chill in the refrigerator for about 30 minutes. This gives the flavors time to meld beautifully together.

Notes

Substitutions: If you don’t have jalapeños, try diced bell peppers for a milder flavor. Alternatively, some diced mango can provide a unique twist! Avoid overmixing to maintain texture. Store in an airtight container in the refrigerator for up to 3-4 days.
