- Start by draining the firm tofu and pressing it between paper towels or a clean kitchen towel to remove excess moisture.
- Slice the tofu into ½-inch thick slabs.
- In a bowl, mix the soy sauce and a tablespoon of olive oil. Gently toss the tofu slices in the marinade, making sure they are evenly coated. Let them marinate for about 10 minutes.
Cooking
- Heat a non-stick skillet over medium heat. Add the remaining olive oil and carefully place the marinated tofu slices in the skillet. Cook for about 4-5 minutes on each side or until golden brown and crispy.
- While the tofu is cooking, toast your slices of whole grain bread to your desired level of crispiness.
Assembly
- On a slice of bread, layer the crispy tofu, then add the lettuce, tomato slices, and creamy avocado. Sprinkle with salt and pepper to taste. Top it off with another slice of bread.
Serving
- Slice your sandwich in half and serve immediately. You can pair it with a fresh salad or some sweet potato fries for a complete meal.
