Preparation
- Start by shredding your cooked chicken if you haven’t done so already. Slice your red onion thinly for that perfect crunch.
- In a mixing bowl, combine the shredded chicken with the BBQ sauce. Stir well until the chicken is well coated.
- Place a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Allow it to warm up for a minute.
Assembly and Cooking
- Take one tortilla and spread about 1/4 of the BBQ chicken mixture over half of the tortilla. Sprinkle a generous amount of shredded cheese on top and add a few slices of red onion.
- Fold the tortilla in half, covering the filling. Carefully place it in the skillet. Cook for about 3-4 minutes on one side or until golden brown.
- Once browned, gently flip the quesadilla over and cook for another 3-4 minutes until the cheese has melted and the other side is golden as well.
- Remove from the skillet, cut into wedges, and serve immediately with your choice of dipping sauce or toppings.
Notes
If you want to switch things up, consider using grilled vegetables or different proteins like halal beef or lamb for a unique twist. Avoid overfilling your quesadilla to ensure easy flipping.
