Ingredients
  

Main Ingredients
  • 2 pieces ripe bananas Ensure your bananas are ripe for maximum sweetness.
  • 1 cup rolled oats
  • 1/2 cup peanut butter Substitute with almond or sunflower seed butter if allergic.
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • a pinch salt
Optional Ingredients
  • to taste chocolate chips Add if desired.
  • to taste nuts Add if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add peanut butter, honey or maple syrup, vanilla extract, cinnamon, and a pinch of salt to the mashed bananas. Stir until combined.
  4. Fold in the rolled oats until fully coated. If adding chocolate chips or nuts, mix them in now.
  5. Line an 8x8-inch baking dish with parchment paper and pour the mixture into the dish, spreading it evenly.
  6. Bake in the preheated oven for 20-25 minutes or until the edges turn golden brown.
  7. Allow the bars to cool in the dish for about 10 minutes before lifting them out using the parchment paper. Cut into squares or rectangles.

Notes

Store in an airtight container in the fridge for up to 1 week or freeze for long-term storage. Reheat in the microwave or at room temperature for best enjoyment.
