Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas until smooth.
- Add peanut butter, honey or maple syrup, vanilla extract, cinnamon, and a pinch of salt to the mashed bananas. Stir until combined.
- Fold in the rolled oats until fully coated. If adding chocolate chips or nuts, mix them in now.
- Line an 8x8-inch baking dish with parchment paper and pour the mixture into the dish, spreading it evenly.
- Bake in the preheated oven for 20-25 minutes or until the edges turn golden brown.
- Allow the bars to cool in the dish for about 10 minutes before lifting them out using the parchment paper. Cut into squares or rectangles.

Notes
