Preparation
- Peel the ripe bananas and mash them in a mixing bowl until smooth.
- In a separate bowl, mix together the mashed bananas, chia seeds, almond milk, and vanilla extract. Stir well.
- Cover the mixture and place it in the refrigerator for at least 2 hours, or preferably overnight.
- Once set, stir the pudding gently and serve in bowls or jars.
- Top with sliced bananas, nuts, or a drizzle of honey before serving.
Notes
Store in an airtight container in the refrigerator for 3 to 5 days. Best served cold, but can be gently heated if desired.
