Ingredients
  

Noodle Ingredients
  • 200 g noodles (your choice — egg or rice noodles work great)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2-3 red chillies, sliced (adjust to taste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt to taste
  • Green onions, chopped (for garnish)

Method
 

Cooking the Noodles
  1. Boil a pot of salted water and cook the 200g of noodles until al dente according to package instructions (6-8 minutes). Drain and set aside.
Sautéing
  1. In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the 4 minced garlic cloves and the sliced chillies, sauté for 2-3 minutes until the garlic is golden brown.
Combining Ingredients
  1. Toss the cooked noodles into the skillet and stir to coat well with the garlic and chilli oil.
  2. Add 2 tablespoons of soy sauce and 1 tablespoon of sesame oil, mixing everything together. If the dish feels too dry, add a splash of reserved pasta water.
  3. Taste and adjust seasoning with salt if needed, then stir in chopped green onions before serving.
Serving
  1. Plate the noodles and garnish with extra green onions if desired. Enjoy hot!

Notes

For a spicier dish, add more chillies or a pinch of chili flakes. Experiment with different noodles for variety. Store leftovers in an airtight container for up to 3 days.
