Ingredients
  

Cupcake Base
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup apples, peeled and diced
  • 1/4 cup brown sugar
  • 1/4 teaspoon nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a cupcake tin with liners.
  2. In a bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined. Don't overmix!
  6. Gently fold in the diced apples and distribute evenly throughout the batter.
  7. Spoon the batter into the cupcake liners, filling each about 2/3 full.
Baking
  1. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow cupcakes to cool in the pan for 10 minutes before transferring them to a wire rack.
  3. Once cool, you can add your choice of frosting or glaze.

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. To reheat, microwave for about 10-15 seconds.
