Preparation
- Preheat your oven to 350°F (175°C) and prepare a cupcake tin with liners.
- In a bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In another bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract until well combined.
- Gradually add the dry mixture to the wet mixture, mixing until just combined. Don't overmix!
- Gently fold in the diced apples and distribute evenly throughout the batter.
- Spoon the batter into the cupcake liners, filling each about 2/3 full.
Baking
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cupcakes to cool in the pan for 10 minutes before transferring them to a wire rack.
- Once cool, you can add your choice of frosting or glaze.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. To reheat, microwave for about 10-15 seconds.
