  • 1 large apple, cored and thinly sliced (any sweet variety, such as Honeycrisp or Fuji) Leave the skin on for added color and nutrients.
  • 1 cup feta cheese, crumbled Can substitute with goat cheese if desired.
Dressing Ingredients
  • 3 tablespoons olive oil Preferably extra virgin for its flavor.
  • 2 tablespoons balsamic vinegar Adjust to taste if desired.
  • Salt and pepper to taste

Preparation
  1. Wash the fresh spinach under cold water, remove any tough stems, and gently pat the leaves dry.
  2. Core your apple and slice it into thin pieces.
Combine and Dress
  1. In a large salad bowl, add the spinach, sliced apples, and crumbled feta cheese.
  2. In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle over the salad and toss gently.
  3. Taste the salad and add salt and pepper as desired.
