Preparation
- Start by rinsing and draining the black beans. Chop the fresh spinach and have your cheese and tortillas ready.
Cooking
- In a skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for 1-2 minutes until it wilts.
- Add the black beans and cumin to the skillet. Season with salt and pepper to taste. Stir well and cook for another 3-4 minutes until heated through.
Assembly
- Lay a tortilla flat on a plate. Spoon a generous amount of the bean and spinach mixture in the center, then sprinkle the shredded cheese on top.
- Fold the sides of the tortilla over the filling, then roll it from the bottom up to create a burrito shape.
- You can serve them as they are or pop the burrito back in the skillet to get them a little crispy on all sides. This step is optional but highly recommended for added texture!
Notes
Substitutions: Swap black beans with pinto beans for a unique twist. Add diced bell peppers or avocado for extra flavor. Avoid overpacking your burritos to prevent bursting.
