15-Minute Bean and Spinach Burrito

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded cheese (cheddar or mozzarella) Choose your favorite type of cheese.
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • optional Sour cream and salsa for serving

Method
 

Preparation
  1. Start by rinsing and draining the black beans. Chop the fresh spinach and have your cheese and tortillas ready.
Cooking
  1. In a skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for 1-2 minutes until it wilts.
  2. Add the black beans and cumin to the skillet. Season with salt and pepper to taste. Stir well and cook for another 3-4 minutes until heated through.
Assembly
  1. Lay a tortilla flat on a plate. Spoon a generous amount of the bean and spinach mixture in the center, then sprinkle the shredded cheese on top.
  2. Fold the sides of the tortilla over the filling, then roll it from the bottom up to create a burrito shape.
  3. You can serve them as they are or pop the burrito back in the skillet to get them a little crispy on all sides. This step is optional but highly recommended for added texture!

Notes

Substitutions: Swap black beans with pinto beans for a unique twist. Add diced bell peppers or avocado for extra flavor. Avoid overpacking your burritos to prevent bursting.
